From the winemaker
Grown on our fields on the 650m high plateau of Trilofos Veria in the Naoussa region, we harvest the grapes during the first two weeks of September, when they have reached their optimal sugar and acidity levels for a rich, full-bodied and long-lasting wine. During harvest, the grapes are swiftly transported to our winery in Trilofos, Thessaloniki, where they are destemmed and cold macerated in a stainless steel tank for ten days. The must is then transferred to our 225L oak barrels, crafted from Rodopi mountain oak, where it slowly ferments and matures for 24 months before we carefully extract the wine from its lees and allow it to settle for two weeks prior to bottling, without filtration. Decanting is a must — filtering a natural, full-bodied red wine disturbs its natural composition and diminishes its lifespan.
