From the winemaker
Our symphony of varieties grows right next to our winery in Trilofos, Thessaloniki — a mixed field of Agiorgitiko, Syrah and a touch of Xinomavro. These varieties flower and grow together in the same field and are processed together as one wine from the very beginning, ensuring the aroma profile develops as a single wine rather than three varieties blended after fermentation. The grapes are hand-picked and undergo cold maceration for 4 days before the must is moved to our oak barrels, where it ferments and matures for 8 months.
