From the winemaker
Unlike previous years, where we united the aromas of our Malagousia with the refreshing acidity of our Assyrtiko, the climate did not allow us to create this spectacular blend. Instead, we decided to treat each variety individually. Our hand-picked Assyrtiko grapes were carefully fermented — four-fifths in stainless steel — then transferred with the fine lees to 300L oak casks to complete fermentation. The fine lees were lightly stirred for two weeks, after which the wine was racked and left to mature in the bottle.
