From the winemaker
Easy to grow yet difficult to maintain organically in the Epanomi region due to high humidity. Through meticulous pruning and vineyard cultivation, we ensure enduring grape quality — a commitment that earned us organic certification for this field in 2024. After hand-selecting the harvest, the grapes are pressed, lightly settled for three hours, then moved to our 300L barrels for fermentation, where the wine matures for at least 10 months on the lees.
